NOTES:
* Indian eggplant, onion and tomato casserole -- This is an Indian dish, called Baigan Bartha in Hindi. We make it a lot and call it "Bangin' Bart." It is eggplant, onions and tomatoes, but not in the usual way. In this recipe, the vegetables are cooked to mush, with only a small amount of tomato, just enough to flavor it. Yield: serves 6-8.
* I don't make this with any spices but salt and pepper. The genuine Indian version of the recipe adds various Indian spices; try about 1 t of fresh ginger, about 1/2 t of turmeric, about 1/2 t of cayenne, and about 1 t of garam masala for a more authentic Indian flavor.

beneficial error - I made this cake for Oktoberfest 2005 and I misread the recipe, but it turned out really well! I added 1/2 c vodka, 1/2 c coffee liqueur and 1/2 c water and only sprinkled powdered sugar on top of the finished cake (no glaze). I also had to cook it for 50 minutes.

* Very rich and moist muffins with bran, raisins, nuts and dates -- I experimented a lot to find the ultimate bran muffin recipe. I started with a recipe from the "Betty Crocker Cookbook," but I've changed it enough that I'm willing to take all the credit for it.
* Using 1/3 hazelnuts and 2/3 walnuts adds a distinctive flavor.
* I like to let the batter sit in the refrigerator for a while (a few hours to overnight) before I bake it.
