Mix in the lemon juice & simmer gently. Cool & skim any fat that

tender. Stir in rice, seasonings, and lemon juice. Place fillets in
buttered shallow baking dish. Spoon rice mixture on lower portion of each
fillet. Fold over to enclose Lemon rice with cashews. Cook the rice in a pan of boiling water until tender, then drain. Add the
remaining ingredients and stir over a low heat for three minutes for the
flavours to mix.
Lemon rice and peas In a medium saucepan, bring the water toa boil over high heat. Add the
rice, cover, reduce the heat, and simmer until the water is absorbed, 30 to
40 minutes.
Remove from the heat.
Heat the olive oil in large skilet over medium heat.
Raspberry rascal Whirl raspberries and pineapple in blender. Add water and honey to
taste. Whirl again. Strain. Garnish with tiny piece of pineapple.
