Ingredients: 2 Cup(s) Yellow cornmeal 2 Teaspoon(s) Baking powder 1 Teaspoon(s) Baking soda 1 Teaspoon(s) Salt 2 Cup(s) Buttermilk 1/2 Cup(s) Butter 1 Can cream-style corn 8 Ounce(s) Monterey Jack Cheese 2 Can(s) Chopped green chiles 4 large Eggs, lightly beaten 1/2 Cup(s) Chicken broth |
Directions: Prepare corn bread: Preheat oven to 350 degrees. Grease 13x9 metal baking pan or deep 12 inch skillet with oven safe handle. In large bowl, with spoon, mix cornmeal, baking powder, baking soda, and solt. Stir in buttermilk and remaining ingredients except chicken broth and mix until thoroughly blended. Pour batter into baking pan. Bake corn bread 60 to 65 minutes until top is browned and toothpick inserted in center comes out clean. Cool corn bread in pan on wire rack. (If not making stuffing right away, cover and reserve corn bread up to 2 days.) Prepare stuffing: Into large bowl, crumble corn bread. Drizzle with chicken broth, toss to mix well. Use to stuff 12 to 16 lb turkey. Or, spoon into 13x9 glass baking dish, cover with foil and bake in preheated 325 degree oven 45 minutes or until heated through. |

Barley bread Dissolve yeast in warm water & place in large mixing bowl. Stir in
honey & leave till yeast becomes foamy. Combine the three flours &
add half to the yeast. Beat with a wooden spoon for 10 minutes. The
consistency should be of t Ray bauer's swedish rye bread (limpa) THIS STEP IS VERY IMPORTANT!
Combine the first 7 ingredients (using FRESH seeds only!) in 1 1/3 cup of
boiling water and soak for 1 hour minimum. (This pre-soaks the cracked
wheat and pre-releases the other flavors.)
Dump this concoction in Malted rye bread abm Scald milk and let cool to room temperature.
Bring all ingredients to room temperature and pour into bakery, in order.
Set "baking control" at 10 o'clock. Select "white bread" and push Start.
In hot & humid weather Tri-grain bread Garrett. WONDERFUL! I used quick rise yeast. Original recipe calls
for 2 T butter instead of applesauce. Makes 1 1/2 lb. loaf.
Panasonic/Nat'l machines use 3 1/2 t yeast. DAK/Welbilt machines, add

* The original recipe called for 1 1/2 T vegetable oil for the lg loaf and
1 T vegetable oil for the sm loaf.

Bit-o-barley stuffing Mix all ingredients and bake in an oiled casserole dish at 350 F. for one
hour.

Barley/corn bread Preheat oven to 350 F. Mix the cornmeal, Bits-O-Barley, baking soda and
sea salt. Add the egg, oil, buttermilk, honey, onion and corn and mix
only until the dry ingredients are moistened. Turn into a well-oiled and
heated large iron skillet. Simple one-loaf barley bread Mix first five ingredients together and let stand 10 minutes. Stir down
and let stand 15 minutes. Add oil and flour. Knead for 3 minutes. Shape
into a loaf. Let rise in pan until double in size. Bake at 350 F. for 45
minutes or until toot Mexican corn stew Seed and dice the jalapeno peppers. Dice the tomatoes. Thinly slice
carrots and celery stalks. Seed and dice red peppers. Crush 2 cups of
corn chips(optional). In large fry pan over medium high heat saute
the onions and garlic for 5 minutes. Ad Baked cod with stuffing Stuffing:
Mix all ingredients together well. Should be able to form into a ball.
Stuff into cod immediately before baking.
Remove bone from whole cod (head, tail and fins removed). Stuff
interior of cod with savoury stuffing (see below). Potage de ble ( corn soup) Potage du Ble
This fresh corn soup from Renard Jacques, chef at Auberge Benedict Arnold
in St. Georges is rich and creamy. It may be made with frozen or canned
corn kernels, but it won't have the same delicate sweetness.
Bring water Dried fruit-rice stuffing Melt butter in large skillet. Saute onions, celery and parsley in butter.
Remove from heat and combine with rice in large bowl. Stir in marjoram,
thyme and sage and season to taste with salt and pepper. Add eggs, stock
and fruit. Mix well. Stir in remaining ingredients. Use as stuffing for poultry or pork roast. To serve as a side dish, cook until th Cranberry-rice stuffing Cook the rice in the water until tender, about 1 hour. Saute the remaining ingredients in a skillet until the celery and onion are tender. Add the rice and stir to blend. Use as a stuffing in one small chicken. Brown rice & sweet corn salad Heat the oil in a alrge wok or pan and saute the onion until translucent.
Add the diced green and red peppers and saute until tender. Reduce the heat
and stir in the corn, rice, and finally the guava. Remove from heat and
season to taste. Chill Lentil & corn soup Corn and sweet potatoes give this soup a nice sweetness. It's adapted from

* This recipe is from my friend Aya Crusty whole-wheat oatmeal bread 1. In a large bowl, combine regular flour, salt, and
yeast. In a 2 quart saucepan over low heat, heat
water, molasses, butter or margarine and 3 cups oats
until very warm (120 to 130~). Butter does not need to
melt completely.

Sift flour, sugar, and soda. Mix beer, egg, and melted butter. Mix with dry

From: Mich Irish soda bread Preheat oven to 350 degrees. Butter a 9-inch round cake pan. Sift
together the dry ingredients. Using a food processor with the steel
blade or a pastry cutter, cut the butter into the flour mixture until
it resembles small peas. Blend in the Light bread Dissolve the yeast in 1 cup of the water. Cook the
potatoes, mash very fine and add yeast along with 1
teaspoon salt, 1 teaspoon sugar, and the rest of the

the yeast. In a sauce pan, heat the 1 3/4 cups water,
the 1 cup rolled oats, light molasses, shortening, and
salt just until warm (115 to 120~) and shortening is
almost melted; stir con Oatmeal honey bread Put the oatmeal, honey, salt and butter in a large mixing bowl. Add
boiling water and mix together. Let stand for 45 minutes, stirring
occasionally.
Following the yeast package directions, add the yeast to lukewarm water,
