Directions: Well, I'm just taking a wild stab here, but _The_Whole_Chile _Pepper_Book_ has a recipe for Papas a la Huancaina that is a dish of boiled potatoes topped with cheese and a sauce that is probably light green and creamy. Here's the sauce part: <Curtis> cjackson@mv.us.adobe.com Combine 2 Aji' or 3 Jalapen~o chiles, stems and seeds removed and chopped, 1 cup queso blanco or Munster cheese, and 1 cup heavy cream in a blender and puree until smooth. Heat 2 tablespoons of olive oil and slowly add the cheese mixture, stirring constantly. Simmer the sauce for 5 minutes or until it thickens. If the sauce you remember didn't have cheese in it, try omitting it. |

Sauce (for whole fish baked in salt crust) Peel and finely chop the shallot. Put it in a pan with the white
wine and fish stock and boil until reduced by half. Whisk in the
crŠme fraŒche and herbs until smooth and creamy. Season with a
little salt and pepper and serve with the fish.
Sole in almond sauce Place sole fillets in a 13X9X2 inch baking dish; pour wine over fish
and bake in oven 15 to 20 minutes or until fish flakes easily with
a fork, but is still moist. Do not overcook. While fish bakes
set aside 1/4 cup of the shrimp; mash remaining Pasta with mexican turkey picadillo sauce Heat 2 tablespoons oil in a large saucepan, add jalapeno peppers and
garlic and saute about 1/2 minute. Add picadillo and tomato sauce
and simmer 4 to 5 minutes until heated and thickened. Add a few
tablespoons water if sauce is too thick. Taste and ad Roasted red pepper sauce Pat rinsed peppers between paper towels; transfer to food processor. Process until pappers are finely chopped; set aside.

3) Remove from the heat and stir in the remainder of the ingredients.
4) Serve slightly warm.
Whole crispy brook trout with mango-pineapple sauce and spicy chinese long beans Mix the flour with the spices. Dredge the trout and deep-fry at 375 degrees until golden brown. Season with salt. Repeat process with the onions. On an oval plate, place a small mound of the long beans and top with trout. Encircle with sauce.
