Aebleskiver (Danish Pancake Balls)
Ingredients: 3 Eggs, separated 2/3 Cup(s) All-purpose flour 1 Teaspoon(s) Sugar 1/4 Teaspoon(s) Salt 5 Tablespoon(s) Heavy cream 1/4 Teaspoon(s) Freshly grated lemon peel 2 1/2 Teaspoon(s) Butter, melted |
Directions: An iron pan with circular indentations is used to make the meltingly light
Danish pancake balls called aebleskiver. There is no real substitute for
aebleskiver pans, fortunately they are available in fancy cookware shops or
in Scandinavian import stores through the country. The authentic way to
turn the aebleskiver in the pan is with a knitting needle.
(I remember my grandmother telling me this too!) I always thought she was
making it up.
Beat the egg whites until stiff. With the same beater, beat the egg holks
until frothy. Combine the flour, sugar and salt and sift into the egg
yolks in three stages, adding the cream alternately. Add the lemon peel,
then stir in the melted butter. Stir a little of the egg whites into the
mixture to lighten it, then gently fold in the remaining egg whites.
Meanwhile, heat an aebleskiver pan. When the pan is hot, grease each
indentation with butter. Spoon in the batter, filling the indentations 3/4
full. Cook until the lower half of each aebleskiver is golden brown but
the upper half is still uncooked.
With a pointed object such as a knitting needle, nut pick or skewer and
using a knife or spoon for balance, tip each aebleskiver and turn it over
in the indentation. The uncooked batter will flow out to fit the
indentation, making the aebleskiver round. Cook until the other half is
golden brown.
Comments: Serve immediately with butter, confectioners' sugar and or tart jelly. Makes 14 aebleskiver. |

As a lover of Aebleskiver it really hurt me to see how "distorted" some of
these reci pes were. So when I bought the book "Mad", by Ingeborg Suhr from
Herbed spinach balls Preheat oven to 350 degrees F. Thaw spinach and remove excess liquid. Add
remaining ingredients (stuffing mix, parmesan cheese, garlic, onion, eggs
and butter) and mix well. Form the mixture into small balls and place on a
baking sheet. Bake f Chocolate bourbon balls 1. Place margarine in medium bowl. Microwave at HIGH (100%) until melted,
1 to 2 minutes. Mix in sugar, nuts and bourbon. Refrigerate until firm.
2. Shape into 1-inch balls. Refrigerate until firm. Combine chocolate

Ashkenazic chicken soup & matzo balls with fresh dill Combine chicken wings, water, onion, carrot, parsnip, celery, parsley
and dill sprigs, and pinch of salt to a large saucepan and bring to a
boil. Partly cover and simmer 2 hours, skimming occasionally. Skim
off excess fat. (Chicken soup can be Diabetic cream cheese balls Cream the cream cheese and add pecans. Chill until cheese will form balls. Dip balls into melted whitecote or milkcote chocolate coating. Makes about 25 balls.
Cheese balls Mix all ingredients well. Mold in small vals (dime size). Bake at
350F for 8-10 minutes. Watch carefully as they brown quickly. Will keep
indefinitely if put in a tin.
Fruit balls Melt butter and dates, coconut, nuts and brown sugar. Cook for 6 minutes
and then add rice krispies. roll in balls and then in powdered sugar.
Yield approximately 104 balls.

Anna denzer's danish puff Yield: 2 12-inch pastries, about 10 servings each
1. Combine flour and margarine of Dough 1 as for pie dough. Add the water
and gather into a ball.
2. Divide in 2 and pat each half into a 12x3 strip on a cookie sheet. (It's
important to Stuffing balls Boil giblets, butter, and celery tops until done. Toast breads, then break
toast into small pieces. Add Pepperidge Farm stuffing to toast. Cook
chopped onions in stock. When tender, add to bread mix. If dressing is too

Make a well in center of dry ingredients. Add liquid mixture all at one
time, stirring until well blended.
Beat until rounded peaks are formed: 3 egg whites. Gently spread batter Olive cheese balls Mix cheese and flour. Add margarine and mix thoroughly. If dough seems
dry, work with your hands. Mold 1 teaspoon of dough around each olive,
shape into ball. Place 2 inches apart on greased baking sheet. Cover,
chill for 1 hour. Heat oven to Coventry, harlequin, holiday, fruit & nut cheese balls In a bowl, blend cream and cheddar cheeses. Add onion, parsley. Lea &
Perrins, and salt; blend well. Shape into a ball. Chill and serve with
assorted crackers, if desired. HARLEQUIN CHEESE BALL: Add 2 tablespoons
finely diced pimiento, 1 t Sleep-in pancake mix Combine all ingredients in a large bowl. Store in plastic bags or a covered
container.
Makes 8 batches of pancakes, about 80 pancakes.
Buckwheat Pancakes: Decrease flour by 1/2 cup and add 1/2 cup buckwheat
flour. Eliminate spices, if desired.
Snow balls cream butter, sugar, flour and vanilla. Add nuts. Roll in balls. Bake
at 300 degrees for 30 minutes. While still hot roll in 4X sugar.

bourbon flavor. Cream butter and powdered sugar with mixer, adding bourbon
and pecan mixture. Roll mixture into small balls and chill in refrigerator
for 1-1/2 hours. Melt choc Chocolate-gilded danish sugar cones Preheat oven to 400'F. Generously grease 4 cookie sheets. Beat butter and
sugar in large bowl until light and fluffy. Blend in flour. In clean, dry

Danish blue cheese dressing Combine ingredients in order given, blending well after each addition.
Cover and chill at least 2 hours before serving. Stir before using.

together margarine and sugar until light and fluffy. Add vanilla and
sugar substitute to creamed mixture. Beat at medium speed for 1/2
minute.
