Ingredients: 8 Cloves of Garlic, unpeeled 4 Dried chiles Anchos stemmed,seeded,deveined about 2 ounces 6 Dried chiles Guajillos stemmed,seeded,deveined about 1 1/2 ounces 1/2 Inch stick cinnamon about 1/2 t ground 1 Clove, or a pinch ground 10 Black peppercorns scant 1/4 t ground 2 large Bay Leaves broken up 1/8 Teaspoon(s) Cumin seed, or 1/8 t ground 1/2 Teaspoon(s) Vermouth 1/2 Teaspoon(s) Dried Thyme 1/4 Cup(s) Cider vinegar |
Directions: Toasting the chiles and garlic. Roast the garlic cloves on a griddle or
heavy skillet over medium heat, turning frequently, until blackened in
spots and VERY soft, about 15 minutes. Remove, cool, skin and roughly chop.
While the garlic is roasting, tear the chiles into flat pieces and toast
them a few at a time: Use a metal spatula to press them firmly against the
hot surface for a few seconds, until they blister, crackle and change
color, then flip them over and press them flat to toast the other side.
Soaking the dried chiles. Break the chiles into a small bowl, cover with
boiling water, weight with a plate to keep submerged and soak 30 minutes.
Drain, tear into smaller pieces, place in a blender jar and add the garlic.
Finishing the Adobo. In a mortar or spice grinder, pulverize the cinnamon,
cloves, peppercorns, bay leaves and cumin. Add the chiles along with the
oregano, thyme, salt, vinegar and 3 Tb water. With a long series of blender
pulses, reduce the mixture to a paste. Run the blender for a few seconds
until the mixture clogs, then scrape down the sides with a spatula and
stir; repeat a dozen times or more until the mixture is smooth. Don't add
water unless absolutely necessary or this marinating paste won't do its job
well. Strain the paste through a medium-mesh sieve into a noncorrosive
container with a tight-fitting lid. Cover and refrigerate.
Considerations: After soaking the chiles, they can be put through a foley
food mill to remove the skins and the seeds. Add this puree along with the
garlic to the small blender jar and proceed. If this is done, and the
mixture is put together in a small blender jar, and pulsed, scraped down,
and mixed very well the final sieving can be eliminated.
All of the chiles can be Ancho or Guajillo. You can substitute 3 1/2
ounces of California or New Mexican chiles for the above chiles but the
flavor will be light.
Adobo with powdered chiles: For a darker, stronger tasting adobo made
without the tedious series of blender runs, roast the chiles and garlic as
directed above, then pulverize the chiles with the cinnamon,cloves,pepper,
bay leaves and cumin in several batches in a spice grinder; sift through a
medium-mesh sieve. Skin the garlic and mash it to a smooth paste. Mix with
the powdered chile mixture, oregano, thyme, salt, vinegar and 6 Tb water.
Store as directed above.

under it. Lift up and pull the entire membrane off. The importance of this

Toast the bread lightly. Remove bacon to paper towels to drain.

Tandoori marinade for chicken If you left out the yogurt, you'd have a reasonably dry marinade. Julie
also calls for using unseasoned meat tenderizer & lemon juice on the
chicken before the above marinade is applied. Hope all of this is of some
help.
Jerk marinade Mix together all the ingredients. A food processor fitted with a
steel blade is ideal for chopping and grinding. This will provide an
excellent marinade for chicken, beef, or pork. Store leftover
marinade in the refrigerator Chile corn chowder Combine, chiles, broth, potato, onion, and corn in a large pot and cook over low
heat until potatoes are done. Add the cream and cheese and heat through,
stirring, until the cheese is melted.
Grilled chicken breast with garlic lemon marinade Place chicken in shallow dish. Combine all ingredients, pour over both side
of chicken. Cover and refrigderate, fish up to 2 hours and chicken overnigh
if you wish. Grill covered or broil about 10 min. each side until done, ser
immediately.
Citrus marinade and salsa (for chicken or fish) For marinade, in a 1-cup measure combine lemon juice, sherry, oil,
oregano, and garlic salt. Set aside 2 tablespoons. Pour remaining
into a plastic bag in a bowl; add chicken or fish. Close bag; chill
1 hour, turning once.

Combine ingredients in a glass jar, sh Adobo sauce [if i understand my chiles] Cover chiles with hot water, let sit for 15 min. Combine chiles, and 1/4 to
1/2 cup of the water they were soaking in, onion, garlic, oregano and cumin
in a blender and puree. Saute the mixture in oil for 5 min add vinegar and
sugar and bring to a Classic red chile sauce Arrange chiles on baking pan sheet and place in a 200 F oven for 5
minutes or until the chiles smell like they are toasted. Remove the
stems and seeds.
Saute the onions and garlic in the oil until soft.
Place all ingredients in a blender wi Alfredo's bbq fish marinade Mix all the above ingredients in deep dish. Marinate fish for one hour
before grilling.
Tastes very good on fresh Mahi Mahi or Ahi Tuna. Depending on your
preference you can cut back on the salt. I prefer to cut back on the salt

Artichokes cooked in marinade 4 TB red wine vinegar
4 ts olive oil
2 garlic cloves -- cut in

Trim artichoke stems flat and pull off any bruised outer leaves. Cut off
top third of artich Green chile stew Trim excess fat from lamb shoulder; cut lamb into 1-inch cubes.
Cook and stir lamb, onion and garlic in oil in 4-quart Dutch oven
until lamb is no longer pink; drain. Stir in broth, salt, juniper
berries and pepper. Heat to boiling; reduce heat. Chile relleno casserole Rinse chiles, open flat and remove seeds. Drain on paper towels.
Brown meat with onion and garlic. Drain. Add 1 tsp cumin, 1.5 tbs
chili powder and salt. Stir.
In a greased 9x13" pan, layer chiles, beef and additional chiles.
Combine ch Grilled halibut marinade Skewered tofu in a soy, ginger and orange marinade Combine all the marinade ingredients & whisk to emulsify.
Slice tofu cake in half & marinate at room temperature for 1 hour or
for longer in the refrigerator. Turn frequently.
Wash & trim the mushrooms. Scrub & trim the daikon &a Denise's stir fry and marinade Marinate chicken or meat pieces in the marinade for at least an hour. Stir
fry in very hot 2 tablespoons of oil. Remove from the pan. Add thinly
sliced vegetables and stir fry for 3 minutes. Return the meat to the pan.
Add peapods and stir fry 2 mor Hummus marinade In the container of a food processor or blender, place the garlic cloves,
sesame seeds, and 2 Tbsp. olive oil. Process until smooth.
Add the chick-peas, lemon juice, parsley, and salt. Process once more.
Slowly add the remaining 4 Tbsp. olive Fresh herb and garlic marinade Whisk together ingredients in a nonreactive dish. Arrange meat in dish;
rub with marinade. Cover; refrigerate for length of time specified in
"Marinating Times" recipe, turning meat occasionally.
Remove meat from refrigerator; let it come to a Chicken & pork adobo Cut pork and chicken into bite sized pieces - alternatively, slice the
pork into 1" thick slices. Combine vinegar, soy, peppercorns, garlic
and bay in a deep dish. Add meats, coat well and marinate 2 hours
minimum, turning regularly to impregnate mea Adobo tuna 1. Combine first 5 ingredients in a large shallow dish, add fish, turning
to coat. Cover and marinate in refrigerator 1 hour, turning fish occasionally.
2. Preheat broiler. Remove fish from dish, discarding marinade. Brush oil over
fish, sprinkle w Smoked brisket Sprinkle brisket with liquid smoke and seasonings. Wrap well in large piece
of aluminum foil. Refrigerate overnight if desired. Place wrapped brisket
in crock pot; cover and cook on low 8 to 12 hours (high 4 to 6 hours).

Skillet smoked salmon 1. Combine soy sauce, granulated sugar, and peppercorns in a mixing bowl.
Add salmon, coat well and marinate for 15 minutes.
2. Meanwhile, line a cast-iron skillet or wok with foil. Add tea leaves,

meat marinate at room temperature for 1 hour.
Bake the cubes on a rack over a baking sheet for 1 1/2 hours at 250
F, or until the meat is very crisp.
