Ingredients: 1 Tablespoon(s) Vegetable oil 2 Beef tenderloins, cleaned 1/2 Cup(s) Adobo sauce, see directions 1/2 Cup(s) White wine 1/4 Cup(s) Sugar 1/2 Cup(s) Hibiscus flowers, dried 1/2 Cup(s) Ginger, peeled and diced 1 Lemon, juice of 2 Tablespoon(s) Walnut oil 2 Shallots, diced 2 Cup(s) Apricots, diced 2 Tablespoon(s) Basil, chopped 2 Tablespoon(s) Mint, chopped 2 Teaspoon(s) Sea salt 1 Pound(s) Mixed greens, cleaned 1 Pound(s) Baby vegetables 3 Basil sprigs |
Directions: 1. Adobo sauce: Soak chiles in hot water for 15 minutes and puree. 2. Marinate beef in adobo sauce and vegetable oil, keep refrigerated until ready to use. 3. To make salsa, combine wine, sugar, hibiscus, ginger and lemon in a sauce pan and bring to a boil. Set aside and let ingredients steep for at least 15 minutes. Strain through a fine sieve without pressing, then and walnut oil, peaches, shallots, basil, mint and season with salt. Set aside. 4. In a medium saute pan, at high heat, sear the beef for 45 seconds to 1 minute on each side. While the beef is cooking in the oven, saute baby vegetables with basil sprigs in vegetable oil for 2 minutes and deglaze the pan with 1 ounce of vinaigrette. Divide greens in the center of each plate, place beef on top and spoon vegetables and salsa around beef and greens. Suggested Wine: Cakebread Sauvignon Blac Napa '92 |

Fresh green salad Soften gelatin in cold water in a medium bowl; add boiling water and stir
until dissolved. Stir in lemon juice, sugar, and salt. chill until
slighlty thickened.
Combine salad dressing with remaining ingredients; gently fold into
gelatin. Mediterranean salad with chickpeas and arugula Serve with: Wedges of lightly toasted rosemary focaccia. Whisk first 6
ingredients in small bowl to blend. Gradually whisk in oil. Season dressing
with salt and pepper.
Combine fennel, tomatoes, mozzarella, chickpeas, red onion, and arugula in
large bowl. Warm turkey-and-sweet potato salad TO PREPARE DRESSING: Combine mustard and egg in large mixing bowl, mix well
and set aside. Place the cream and dried tarragon leaves in a small
saucepan and bring to a boil over medium heat on the stove. Remove from

Food Christine's veggie rice salad In a large bowl, mix veggies and rice together well. Set aside. Mix together dressing ingredients and pour into veggie-rice mixture. Mix
together thoroughly and refrigerate for at least one hour. Tastes best when

Arrange Fruited Chicken Salad O Spinach-strawberry salad Saute almonds in butter. Mix spinach, strawberries, almonds.
Pour dressing over and serve.
For Dressing:
Mix all other ingredients in a glass jar and refrigerate.

Slowly pour in olive oil, whisking constantly. Whisk in oregano, parsley,
and garlic. Use for a dressing on mixed greens.
Black forest potato salad In 2-quart saucepan over medium heat, cook potatoes, covered, in 2
inches boiling water until tender, about 12 minutes; drain.
Meanwhile, in large bowl whisk together vinegar, oil, water and
pepper. Mix in apples. In large nonstick skillet ov Doritos taco salad Brown the ground beef, add taco seasoning. Cut up the lettuce and onion, dice the tomatoes and green pepper. Slice the black olives. Grate cheddar cheese, crunch up a bag of Nacho cheese Doritos and then add to the ground beef. Add Catalina salad dressing Crunchy baked ham salad Combine first 9 ingredients; stir well. Spoon mixture into a lightly

shallots and saut until tender, about 4 minutes. Add brown sugar; stir 1
minute. Add chicken broth, beef broth and Cognac. Simmer until sauce is
reduced to 1/2 cup, about 20 minutes. Summer apple salad Soften gelatin in cold water; stir well. Add sugar and salt. Gradually add
