Ingredients: 2 Acorn squash 1/2 Pound(s) Small Brussels sprouts 2 Teaspoon(s) Olive oil 1 Cup(s) Diced onion 1 Teaspoon(s) Fennel seeds 1 Teaspoon(s) Dried marjoram 1/4 Cup(s) Minced fresh sage 1/4 Cup(s) Fresh orange juice 2 Teaspoon(s) Fresh lemon juice 1/8 Teaspoon(s) Freshly grated pepper 2 Cup(s) Cooked wild rice |
Directions: 1. Preheat the oven to 350 degrees (F). 2. Cut each squash in half and remove the seeds and pulp. In a large baking dish, place the squash, cut side down, with about 1 inch of water. Bake until tender, about 45 minutes. 3. Pour about 2 inches of water into a large stockpot. Place a collapsible steamer in the pot, cover, and bring to a boil. Place the Brussels sprouts in the steamer, cover, and steam for 5 to 7 minutes, or until tender. Set aside. 4. Meanwhile, in a large skillet, heat the oil over low heat. Add the onion and saute for 10 minutes, stirring frequently. Stir in the fennel, marjoram, sage, orange juice, lemon juice, and pepper, and simmer for 3 minutes. Stir in the cooked wild rice and the Brussels sprouts and heat through. 5. Spoon the wild rice and Brussels sprout mixture into the squash cavities. Serve immediately. I often microwave the acorn squash by placing in a shallow glass pan with about 1/2-inch of water, covering with saran wrap and nuking for about 10 minutes or until tender. |

Wild rice stuffing Rinse the rice in a strainer with cold water and drain. Soak the rice in cold water to cover for at least 4 hours. Drain again.
Toss the apple pieces with the lemon juice to prevent browning. If using fresh corn, cut the kernels off the cobs.
Heat the oil Cranberry-rice stuffing Cook the rice in the water until tender, about 1 hour. Saute the remaining ingredients in a skillet until the celery and onion are tender. Add the rice and stir to blend. Use as a stuffing in one small chicken. Fragrant beef curry with rice Sprinkle beef with salt and pepper. Heat 2 tablespoons oil in heavy large pot over high heat. Brought to you and yours via Nancy O'Brion and her Rice creole Bring the water to a boil in a saucepan. Add salt to taste and rice and return to a boil. Cook over high heat for 17 minutes.
Drain the rice in a colander, run hot water over it, and drain again.
Place the rice in a serving dish, and toss in the butter, Saucy spaghetti squash Place whole squash in microsafe 9x13-inch baking dish. Microwave on HIGH
for 10 minutes. Halve squash lengthwise. Remove seeds and membrane.
Place squash, cut side up, in same baking dish. Add 1/3 cup water.
